High Protein Sticky Korean Beef & Rice Recipe

Ingredients (serves 2):
400g diced beef
200g rice
Beef Marinade:
1 tbsp garlic
1 tsp black pepper
30ml soy sauce
1 tbsp sesame oil
Sauce:
15g butter
1 tbsp garlic
1 tbsp sriracha
1 tbsp tomato paste
80ml soy sauce
1 tbsp honey

Instructions:
1. Marinate the beef:

In a bowl, combine your diced beef with garlic (fresh or granulated), black pepper, soy sauce, and sesame oil. Mix well to ensure an even coating so that the beef will soak up the flavors, and leave it to sit for a few minutes to absorb.

2. Boil your rice
Rinse the rice under cold water until the water runs clear. This helps to remove excess starch and keeps the rice from becoming too sticky. Add the rinsed rice to a pot with water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Continue preparing the rest of the meal whilst your rice is boiling.
3. Cook your beef:
Heat a large pan over a high heat. Add your marinated beef and cook for around 10 minutes until the beef is nicely browned and cooked through. Once done, set the beef aside.
4. Prepare the sauce:
In the same pan, add your butter and let it melt over a low heat. The, add some beef stock, garlic, sriracha, tomato paste, soy sauce, and honey. Stir everything together until well combined and bring the sauce to a simmer.
5. Combine and simmer:
Return the cooked beef to the pan, stirring it into the sauce and let it simmer for a few more minutes.
6. Serve and enjoy:
Serve the sticky Korean beef over a bed of freshly boiled rice. For an extra kick, top with a drizzle of sriracha. Sit back, relax, and savor every bite of this comforting, high-protein meal.
